Exclude Patterns and Removing from source control

Is a pattern like this acceptable for an exclude (I see examples for bin\ and *.* and am wondering if you can combine them effectively):

bin\*.xml

Also, is there a way I can select files and remove them from source control without deleting them from the directory?
