Rather than changing the installation procedure, it seems to me the
program itself should (in default of any environment variable) run a
platform-dependent default:

Windows: Notepad
Unix: vi
Macintosh OS X: TextEdit
Macintosh OS 9: SimpleText

The reason I say "not during installation" is that "installation"
doesn't always cover enough ground, as well as being even more
platform-dependent than the list above.
