I was able to resolve the error by copying the contents of the "subclipse"
directory at the root of the downloadable archive into the "subclipse"
subdirectory under the "subclipse-1.2.3" directory also in the archive.

To illustrate, heres the contents of the tar.gz file:

(1) subclipse
(2) subclipse-1.2.3

You need to copy (1) into (2). Why this is needed, and why the stuff is packaged
that way, is completely beyond me.
