I'm just thinking, could it make a difference to only commit file
individual files or directories that actually changed ?

I may be wrong, but my feeling on windows (using tortoise) is that it's
way faster to commit just one file than the whole tree, and this is also
the reason why I often commit deep directories directly rather than the
root one.
