We have a co-license CentOS box with CPU and 2Gbp RAM. To be honest according to the size if your organisation you can just pick the box you need, I'd pick Ubuntu or Debian but whichever you feel comfortable with. When I first started the company I bootstrapped our svn on an Ubuntu vm running on my media PC under my TV!

Well for what it's worth we run svnserve.exe on Windows Server 2003 R2, virtual server on VMware ESX.
The virtual machine has 1 CPU, 4GB of RAM, 1 Gbit network adapter. The hard disk is on a SAN and connection is via iSCSI. This is running really well for us.

Before we got this server though I ran it on a Windows XP desktop machine without problem (sorry can't remember the specs).
