Tag a set of files -- cross trunk folder

Hi,
first of all....sorry for my bad english!
i'm new an i'm evaluating SVN with TortoiseSVN client...i have installed the server o apache 2 and the client Tortoise on my machine and all works fine.
But, i've some questions regarding daily use:
1. I've read about branch/tag on the documentation but only regarding entire folder or entire workspace. Instead, i want to select a set of files from my repository from the trunk directory and tag only them. My trunk directory contains other 3 folders with more then 100 files inside...but for example the relaeas 3.0 of my project involves a modify to only 10 existing files distributed in the three folders. So i want to create a folder named "Rel3" under the Tags directory of the repository that contains only the 10 files that i modified.
2. Another problem related to the first is that i can't be able to keep in my workspace only a subset of my project; i can't be able to browse my repository, select a set of files and update them to my workspace. With Tortoise i can only update a file or a folder that already exist in my workspace.
Maybe the second problem is related to Tortoise client but i didn't find an appropriate mailing list.
