What would happen if you deleted the .svn folders before the update?
Would the folders still be deleted, or would you just get one of those
"broken WC" errors?

If you delete it from the repo-browser, the files will still get deleted
from your working copy when you next update!

No, there isn't.
But: first export the whole wc to someplace else, then svn-rm the
files/folders you don't want anymore, commit, then copy the exported
files back.
