Assuming Outlook 2000, or if MS hasn't disabled this functionality in later
versions:

- Go into your Outlook Address book (Tools->Address Book).
- In the "Show Names from the:" box select "Personal Address Book".
- Select File->New Entry, and select Internet Address.
- Enter the display name and the email address, make sure the
"Always...rtf..." checkbox is unchecked.
- Press the "Send Options" button.
- Check the "I want to specify..." check box.
- Select the "Mime" radio button, then the "Plain Text" radio button.
