I'm a short term user of SVN and CVS and I found that it was easier to
understand SVN than CVS, because SVN has less different concepts I
needed to grasp. But okay... that's my experience.

Not trying to flame anyone, but I've got the feeling that this
discussion is going straight to nowhere :-P

Is it possible to just gather some different situations where and how
(CVS) tags are used.

If we can at least get (all) the different situations clear, than it's
possible to discuss how to solve them with SVN and that will make it
much clearer what SVN lacks in possibilities.

And... those who aren't familiar with an situation and approach can
learn from it.
