I won't make any guesses about how long something should take, and
especially not how long it will take, but I do feel that if it is
possible to estimate (perhaps by simply using timestamps as mile
markers) the percentage of the job that's been completed, a "status
bar"-ish thing, or at least some way of saying not just, "Hi, I'm
still working on your conversion," but, "Hi, I've been working on your
conversion for XX minutes, am still working on it, and expect to still
be doing so for YY minutes. Thanks for your patience."

That would be a Desirable Thing.
