A working copy folder has a depth assigned to it.
When you run update (or any other operation), that depth is used to
determine how deep to recurse.

You can change that depth manually. Usually only for one command, but
you can make that change sticky. Meaning the depth of the folder is
changed permanently, not just for one operation.
