Now you navigate to any subfolder you want to check out, right click it
and choose "Update item to revision" and click on "OK" - that'll do a
"Folder only" checkout for any folders needed on the way to the folder
you selected and do a "proper" check out for the folder that you selected.

Repeat this with all other folders you need and you'll have a sparse
checkout.

Granted, it's not as simple as ticking a few checkboxes, but it's easy
enough...
