Obviously you would be able to "Update to revision..." or "Update
special..." in the context menu and update your sparse checkout or change
it. I apologize for not explicitly mentioning this, I figured everyone would
take this for granted.

See my reply above. I fully support updating the sparse checkout via the
same suggested interface post-checkout.
