AFAIK all Add-Remove programs entries have a key in the registry here.
HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows\CurrentVersion\Uninstall
Just find the appropriate key and delete it.
There may be somewhere else in the registry that needs deleting also,
but that's a start.
