I suggest "finger twisting" or "finger contortion"

Cf. the "art of contortion" = Gummimenschen.

Interestingly enough, the artist themself say it comes from latin
con - tors(i)o(n) "with the body", while Webster's Dictionary says it stems
from con - tortus (torture --- Folter or torsion --- Drehung).
